The seed oils myth
The idea that sunflower, corn or rice oils are "lighter" than EVOO comes from marketing, not science. Seed oils:
- Have a lower smoke point than quality extra virgin olive oil
- Are rich in polyunsaturated fats that oxidise rapidly with heat, producing toxic compounds (aldehydes, acrolein)
- Are industrially refined: deodorised, decolorised, neutralised. Often extracted with solvents.
- Contain virtually no natural antioxidants (polyphenols, tocopherols)
Why EVOO stands up to frying
Extra virgin olive oil has three physical advantages for frying:
- High smoke point: a good EVOO easily exceeds 200°C (392°F), well above the ideal frying temperature of 170-180°C (340-355°F)
- Oleic acid (omega-9): a monounsaturated fat, very heat-stable, that oxidises far less than polyunsaturates
- Polyphenols: protect the oil during cooking, reducing the formation of oxidation by-products
Studies in the European Journal of Lipid Science and Food Chemistry compared EVOO and seed oils at 180°C: EVOO shows greater stability and less formation of harmful compounds.
How to fry well with EVOO
For light, crispy, digestible fried food:
- Temperature: 170-180°C (340-355°F). Higher burns, lower makes it greasy. A kitchen thermometer changes everything.
- Plenty of oil: food should swim, not get barely wet. Fritters made in too little oil are always greasy.
- Dry food before frying: water lowers the temperature and creates foam
- Don't overcrowd: too many fries at once = temperature collapses. Fry in batches.
- Drain on absorbent paper, salt while hot
Which EVOO should I use for frying?
An honest tip: don't use your most prized EVOOs for frying. High heat disperses the delicate aromas you paid for.
For frying, a good "daily-use" EVOO works fine, as long as:
- Acidity below 0.5%
- True extra virgin (not blended "olive oil")
- Freshly bottled (within 12 months)
