Bruschetta with extra virgin olive oil: the perfect recipe in 5 minutes

The bruschetta is the most direct way to judge an extra virgin olive oil. Toast, a drizzle of oil, salt: if the oil is good, you understand it at the first bite. Here is the recipe for the Sannio bruschetta, as we do in Circello, with our three tips to never make a mistake.

Five ingredients, nothing more

The authentic bruschetta has five essential elements, not one more:

  • Homemade bread (1 slice 2 cm thick per person): hard pasta, durum wheat or rye, possibly from the day before
  • Quality extra virgin olive oil (1 tablespoon per slice): better if monovarietal, with medium-intensive fruitiness
  • Whole sea salt or salt flower
  • Ripe fresh tomato (1 small per slice): perineum, cherry, beef heart — what's good about it
  • Garlic (1 clove for every 4 slices): optional but classic

No randomly chopped basil, no balsamic vinegar, no "icing". Authentic bruschetta is essential.

The perfect procedure

  1. Toast the bread on the grill, on the grill, or in the preheated oven at 220°C for 5-7 minutes. It must be golden on the outside and warm on the inside. Never burned.
  2. Rub the garlic on the hot bread: the heat "melts" it leaving the scent. A quick pass, don't push too hard.
  3. Pour the oil flush, without a dispenser: it must be abundant, a little waste must come. One good spoon per slice.
  4. Add the diced tomato or concassé: only pulp, discard the seeds if it is too watery.
  5. Rain salt: a pinch is enough. The salt brings out the flavors of the oil.
  6. Serve immediately: the bruschetta lives in the moments immediately after preparation. If you wait, the bread will moisten and lose crunchiness.

The 3 golden rules

  1. The oil does not heat up: it should be poured on hot bread, but not baked. Cooking would disperse polyphenols and fragrances.
  2. The oil above the tomato, not below: the tomato goes over the oil. So the tomato water does not directly wet the bread.
  3. Do not skimp on oil: a stingy bruschetta is a sad bruschetta. You need to see the oil shine on the slice.

Which oil to choose

To get the most out of it, the bruschetta needs an oil:

  • Medium-intensity fruity: the Nettle is perfect, the Leccino also works very well
  • Fresh: ideally from the new crop (within 8-10 months of bottling)
  • Monovarietal: the characteristic flavour is enhanced on toasted bread
  • With a good content of polyphenols: bitterness balances the sweetness of tomatoes

Avoid pomace oils or mixed «olive oils»: on the bruschetta they look "empty", without character.

Richer variants (for those who love them)

  • Farmer's Bruschetta: + chopped red onion + fresh oregano
  • Bruschetta with caciocavallo: + silane caciocavallo grated on hot oil
  • Autumn-winter Bruschetta: confit cherry tomatoes + new oil + pecorino flakes
  • Bruschetta del Sannio: + papaccelle (sweet peppers in vinegar) + new Ortice oil
  • Green Bruschetta: + turnip tops or friarielli sautéed in a pan + raw oil

Can you make bruschetta without tomatoes?

Yes, the original bruschetta ("fettunta" in Tuscan, "bruschetta" in central Italy) is just toast, oil, garlic, salt. It's the purest way to taste an extra virgin olive oil. Tomato is a summer variant.

Which bread to use for bruschetta?

Homemade bread with hard dough, durum wheat, natural leavening. Altamura bread, Neapolitan brown bread, homemade Sannio bread. No pancarrè, no bread in a box, no French baguette (too crunchy and not very rustic).

Can the bruschetta be prepared in advance?

No. The bruschetta should be served immediately after preparation. If you prepare it in advance, the bread is moistened with the oil and tomato, losing crunchiness. Maximum: toast the bread in advance and season to the last.

How much oil to serve on each slice?

Approximately 1 tablespoon per slice (10-12ml). It seems like a lot, but it's right: a "dry" bruschetta is sad. For consumption at the table, calculate 3 tablespoons of oil for every 4 slices of bread.

Does the oil on the bruschetta have to be new?

The oil of the new harvest (November-December) is the top for the bruschetta: maximum intensity of fruitiness, peak of polyphenols. But even an oil from the previous year, well preserved, can give great satisfaction.
